Broccoli and Avocado Salad

This week’s recipe idea…
Broccoli and Avocado Salad:
Serves about 4
This salad goes very well with both beef and chicken, especially when these meats have been barbequed. Maybe try it the next time you have a braai with some Boerewors from the YFresh online shop.
In a salad bowl, mix together:
4-5 cups Broccoli roughly chopped into bite size pieces
2 cups Avocado cut into bite size pieces
Then add the dressing below and mix again:
For the salad dressing, mix together:
4-6 tbsp olive oil
1tsp good quality mustard
2tsp good quality vinegar
Salt and Pepper to taste
You’re done!
A few notes:
The crunchiness of the raw Broccoli in this salad paired with the creaminess of the Avocado is super delicious, but if you don’t feel that adventurous, you can just steam the Broccoli slightly for an equally delicious salad.
For some extra crunchiness, feel free to add some raw or roasted almonds; whole or chopped, depending on your preference.
If you’re feeling a bit more adventurous, why not add some roughly chopped Curly Kale (Rape) to the mix or completely replace the Broccoli in this recipe with an equal amount of roughly chopped Curly Kale. The Kale might not be as crunchy as the Broccoli; but the pepperiness of the Kale just works so well with the Avocado.
If you want to serve this salad as a stand alone meal, double the recipe and add some grilled/fried bacon (as much as you prefer). 
Why I like to add Kale:
Kale is very high in Vitamins A, C and K and also contains high amounts of iron and calcium. Kale is also a powerful antioxidant and assists with inflammation. Best of all though, is that it is great for your digestion, heart and liver.
